Description

A comforting and cheesy ground beef rice casserole that’s quick, hearty, and perfect for busy weeknights.


Ingredients

  • 1 cup cooked rice
  • 1 lb ground beef
  • 1 cup chicken broth
  • 2 onions, diced
  • 1 cup sour cream
  • 2 tsp garlic powder
  • 2 cups shredded cheddar cheese
  • 8 oz tomato sauce
  • 1 cup frozen green peas
  • Salt, pepper, and oregano to taste

Instructions

1. Place the onions and ground beef into a skillet over medium-high heat and sauté until the meat is browned and the onions have softened.

2. Mix in the garlic powder and sauté for another 30 seconds, then drain excess grease.

3. Reduce the heat to medium and season with oregano, salt, and pepper to taste.

4. Stir in the tomato sauce, cooked rice, peas, chicken broth, and 1 cup of cheese. Simmer until the cheese has melted.

5. Spread the mixture into a well-greased casserole dish and bake in a preheated 250°F oven for 15 minutes.

6. In a bowl, mix together the sour cream and remaining cheese.

7. Spread the sour cream mixture over the casserole and bake for another 15–20 minutes until heated through and bubbly.


Notes

You can substitute ground turkey for a lighter option.

Add extra vegetables like bell peppers or mushrooms for more flavor and nutrition.

Make sure the rice is pre-cooked before mixing into the casserole.

For a crispier top, broil for 2–3 minutes at the end of baking.
