Description

Ingredients

1/2 cup butter, melted and slightly cooled
3 to 4 cups cooked chicken, shredded
2 cups self-rising flour
2 cups whole milk
1 can (10.5 oz) cream of chicken soup
1 cup chicken broth
1 teaspoon dried thyme
1 teaspoon garlic powder
Salt and black pepper to taste


Instructions

Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.
In a large bowl, whisk together the self-rising flour and milk until smooth to create the dumpling batter.
Spread the melted butter evenly across the bottom of the prepared baking dish.
Layer the shredded chicken evenly over the melted butter.
In a separate medium bowl, whisk together the cream of chicken soup, chicken broth, thyme, garlic powder, salt, and pepper until well combined.
Pour the soup mixture over the chicken layer without stirring.
Pour the dumpling batter evenly over the top of the soup layer.
Bake for 40 to 45 minutes, or until the top is golden brown and the center is set.
Allow the casserole to rest for 5-10 minutes before serving to let the sauce thicken.


Notes

You can use leftover rotisserie chicken to make this dish even faster. If you don’t have self-rising flour, you can substitute 2 cups of all-purpose flour mixed with 3 teaspoons of baking powder and 1 teaspoon of salt. Store any leftovers in an airtight container in the refrigerator for up to 3 days and reheat in the oven or microwave.
