Description

This heartwarming casserole is a perfect weeknight meal that combines fluffy red potatoes, tender chicken, and vibrant broccoli in a rich, velvety base. Topped with a golden, bubbly layer of melted cheese and savory turkey bacon, it is a nutritional powerhouse that turns simple pantry staples into a comforting, satisfying feast for the whole family.

Ingredients

Scale

3 pounds red potatoes (cut into 1-inch pieces)
4 tablespoons butter (room temperature)
1 cup sour cream
1/2 to 1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon granulated garlic or garlic powder
1/2 teaspoon paprika
1 medium broccoli crown (cut into bite-size florets)
3 cups cooked chicken (chopped)
4 slices turkey bacon (cooked and crumbled)
2 cups shredded cheese (divided into two portions)

Instructions

Preheat oven to 350°F and grease a 10-inch square baking dish.
Place potatoes in a large pot, cover with cold water, and bring to a boil; cook until tender, about 15-20 minutes.
Drain potatoes and mash them in the pot with butter, sour cream, salt, pepper, garlic powder, and paprika until smooth.
Steam or blanch the broccoli florets until tender-crisp.
Fold the chopped chicken, broccoli, and half of the cheese into the mashed potato mixture.
Transfer the mixture into the prepared baking dish and spread evenly.
Top with the remaining cheese and the crumbled turkey bacon.
Bake for 20-25 minutes or until the cheese is melted and golden.

Notes

Use leftover rotisserie chicken to cut prep time significantly. Ensure broccoli is thoroughly drained to avoid a watery casserole. You can substitute red potatoes with Yukon Gold for an even creamier texture.
