Ingredients
2 cups cooked chicken, shredded
1 cup long-grain rice, uncooked
1 cup sliced mushrooms
1 small onion, diced
2 cloves garlic, minced
2 tablespoons flour
1 cup chicken broth
1/2 cup milk
1/2 cup shredded cheddar cheese
Salt and pepper to taste
1 tablespoon olive oil
1 teaspoon dried thyme (optional)
Fresh parsley for garnish
Instructions
Preheat oven to 375°F (190°C)
Heat olive oil in a pan, sauté onion, garlic, and mushrooms until softened
Stir in flour to create a roux, then gradually add chicken broth and milk
Simmer until thickened, season with salt, pepper, and thyme
In a bowl, combine cooked rice, shredded chicken, and half the gravy
Transfer mixture to a greased casserole dish
Top with remaining gravy and cheddar cheese
Bake for 25–30 minutes until bubbly and golden
Let rest 5 minutes before serving, garnish with parsley
