Description

A warm, flavor-packed comfort food layering seasoned ground beef, refried beans, and a creamy sour cream-mushroom sauce, topped with melted cheese and tortillas. Perfect for families or weeknight dinners.


Ingredients

1 lb ground beef
1 (15 oz) can refried beans (vegetable oil-based)
1 cup sour cream
1 (10.5 oz) can cream of mushroom soup
1 cup shredded cheddar cheese
8 flour tortillas (torn into strips)
1 tbsp taco seasoning
1/2 cup sliced mushrooms
1/4 cup chopped green onions
1/2 tsp garlic powder
1/4 tsp cumin
1/2 tsp salt
1/4 tsp black pepper


Instructions

Preheat oven to 375°F (190°C)
In a skillet, cook ground beef until browned; drain excess fat
Stir in taco seasoning, garlic powder, cumin, and pepper
Spread half the cooked beef into a 9×13-inch baking dish
Evenly layer refried beans over the beef
Mix sour cream and mushroom soup; pour half of the sauce over the beans
Sprinkle 1/2 cup shredded cheese
Repeat layers ending with a top layer of tortilla strips
Pour remaining sauce and sprinkle remaining cheese
Bake for 25 minutes until golden and bubbly
Let cool slightly before serving


Notes

Use leftover ground beef or lentils for a vegetarian option
Serve with avocados or jalapeños for extra flair
Tortilla strips can be replaced with whole tortillas in a spiral for a low-carb version
Ensure refried beans use no pork products
