Ingredients
4 large sweet potatoes, peeled and cubed
1/2 cup unsalted butter, softened
1/3 cup brown sugar
1/4 cup heavy cream
1 tsp vanilla extract
1/2 tsp ground cinnamon
1/4 tsp salt
1 cup pecans, chopped
1/3 cup brown sugar (for topping)
3 tbsp unsalted butter, melted (for topping)
1/2 tsp ground cinnamon (for topping)
Instructions
Preheat your oven to 375°F (190°C) and grease a 9×13 inch casserole dish.
Boil the sweet potato cubes in a large pot of water until tender, about 15-20 minutes, then drain well.
In a large bowl, mash the cooked potatoes with softened butter, 1/3 cup brown sugar, cream, vanilla, 1/2 tsp cinnamon, and salt until smooth and creamy.
Transfer the mashed potato mixture into the prepared casserole dish and spread it into an even layer.
In a separate small bowl, combine chopped pecans, the remaining 1/3 cup brown sugar, melted butter, and 1/2 tsp cinnamon to create the topping.
Sprinkle the pecan mixture evenly over the sweet potato base.
Bake for 25-30 minutes, or until the topping is golden brown and bubbling.
Allow to cool slightly before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F before serving to restore the crunch of the pecans. You can add a handful of mini marshmallows to the topping during the last 5 minutes of baking if you prefer extra sweetness.
